Transglutaminase

Nick-named “meat glue,” transglutaminase is a plant enzyme used in cooking to bind ingredients together. Individuals with compromised immune systems have been advised not to consume transglutaminase because it can worsen some illnesses, including Crone’s and celiac disease.
